Twice Baked Sweet Potato Yumminess

We have these quite often around here as they are one of my husband's favorites. Not only do sweet potatoes offer a wider variety of nutrients than regular potatoes--if you add some cheese, the fat helps your body significantly increase the absorption of beta carotene. Best excuse for some added deliciousness! The recipe is very simple and with prep time and everything, they take about one hour to make. 



Ingredients:

Sweet potatoes (One of two per person)
1 Tbs of greek yogurt per potato (you can use sour cream if you'd prefer)
A couple bunches of green onion tops--whatever suits your taste
1/4 cup shredded cheese per potato (ex: if using four potatoes--shred 1 cup)

1. Preheat oven to 425 F.
2. Clean and poke holes in the potatoes with a fork
3. Bake potatoes for 35-45 minutes
4. Remove and cut potatoes in half (be careful, they will be hot!)
5. Scrape out potato meat and put together in a large bowl (be careful not to tear the potato skin, as this will act as a bowl to keep the good stuff in later)
6. Keep the oven on and grab your greek yogurt, cheese, and green onions
7. Mix together the potato meat, the yogurt, a handful of the cheese, and a handful of green onions
8. Once everything is mixed, added spoonfuls of the mix into the potato skin shells
9. Sprinkle the rest of the cheese evenly on top of the filled potato skins
10. Place the potatoes back in the oven for about 10 minutes
11. Remove the potatoes, top them off with green onions and serve!


They are a great pop of color to any plate and I hope you enjoy them!
